    Biography

    Henrietta is a Professor of Human Nutrition and Coordinator of the Human Nutrition and Dietetics programme, University of Calabar, Calabar, Nigeria. She is the AFROFOODS coordinator and Co-Chair of the IUNS/INFOODS Task Force; a member of the IUNS Task Force on Traditional, Indigenous and Cultural Food and Nutrition; a Fellow of the Nutrition Society of Nigeria. Her research interest is in the areas of Food Composition, Food Consumption and Dietary Assessment; Maternal, Infant and Young Child Nutrition, as well as Traditional/indigenous People’s food systems and Nutrition. Henrietta has published extensively in reputable journals and has well over 80 research publications.
